2373 Sensory Characterization of Cookies with Chestnut Flour

Abstract:
In this work sensory characteristics of cookies with different amount of chestnut flour were determined by sensory and instrumental methods. The wheat flour for cookies was substituted with chestnut flour in three different levels (20, 40 and 60%) and the dough moisture was 22%. The control sample was with 100% of wheat flour. Sensory quality of the cookies was described using quantity descriptive method (QDA) by six trained members of descriptive panel. Instrumental evaluation included texture characterization by texture analyzer, the color measurements (CIE L*a*b* system) and determination by videometer.
The samples with 20% of chestnut flour were with highest ponderated score for overall sensory impression (17.6), which is very close to score for control sample (18). Increase in amount of chestnut flour caused decrease in scores for all sensory properties, thus overall sensory score decreased also. Compared to control sample and with increase in amount of chestnut flour, instrumental determination of the samples confirmed the sensory analysis results. The hardness of the cookies increased, as well as the values of red a* and yellow (b*) component coordinate, but the values for lightness (L*) decreased. Also the values, evaluated by videometer at defined wavelength, were the highest for control cookies and decreased with increase in amount of chestnut flour.

Abstract:
A laboratory study on the influence of compactive effort on expansive black cotton specimens treated with up to 8% ordinary Portland cement (OPC) admixed with up to 8% bagasse ash (BA) by dry weight of soil and compacted using the energies of the standard Proctor (SP), West African Standard (WAS) or “intermediate” and modified Proctor (MP) were undertaken. The expansive black cotton soil was classified as A-7-6 (16) or CL using the American Association of Highway and Transportation Officials (AASHTO) and Unified Soil Classification System (USCS), respectively. The 7day unconfined compressive strength (UCS) values of the natural soil for SP, WAS and MP compactive efforts are 286, 401 and 515kN/m2 respectively, while peak values of 1019, 1328 and 1420kN/m2 recorded at 8% OPC/ 6% BA, 8% OPC/ 2% BA and 6% OPC/ 4% BA treatments, respectively were less than the UCS value of 1710kN/m2 conventionally used as criterion for adequate cement stabilization. The soaked California bearing ratio (CBR) values of the OPC/BA stabilized soil increased with higher energy level from 2, 4 and 10% for the natural soil to Peak values of 55, 18 and 8% were recorded at 8% OPC/4% BA 8% OPC/2% BA and 8% OPC/4% BA, treatments when SP, WAS and MP compactive effort were used, respectively. The durability of specimens was determined by immersion in water. Soils treatment at 8% OPC/ 4% BA blend gave a value of 50% resistance to loss in strength value which is acceptable because of the harsh test condition of 7 days soaking period specimens were subjected instead of the 4 days soaking period that specified a minimum resistance to loss in strength of 80%. Finally An optimal blend of is 8% OPC/ 4% BA is recommended for treatment of expansive black cotton soil for use as a sub-base material.

Abstract:
In the paper we presented the possibility of application collagen gels with active principle-s from marine algae extract and chlorhexidine salt in dental medicine. The hydro-alcoholic extracts from marine algae have been used as they have been obtained. The extracts from marine algae and chlorhexidine salt (digluconate) are incorporated in type I non-denatured fibrillar collagen matrixes. In order to obtain therapeutic effects at nanostructure level, it is important to know the rheological characteristics of the relevant mixtures of collagen gels and extracts from marine algae selected for use. In this survey we have studied mixtures made of non-denatured fibrillar collagen hydro-gels where different concentrations of marine algae have been incorporated. Based on the data obtained for the shearing tensions, we have traced the rheograms – the diagrams for shearing tensions depending on the shearing speed values – from which we have calculated the apparent viscosities as ratios between shearing tension and speed values, which have been figured in relation to the shearing speed values, with a view to levelling dependency.Keywords: rheological properties, fibrillar collagen hydro-gel, marine algae, chlorhexidine salt, dental medicine

Abstract:
The correlation between Total Organic Carbon (TOC) and flow units have been carried out to predict and compare the carbon dioxide (CO2) storage potential of the shale and carbonate rocks in Irati Formation of the Parana Basin. The equations for permeability (K), reservoir quality index (RQI) and flow zone indicator (FZI) are redefined and engaged to evaluate the flow units in both potential reservoir rocks. Shales show higher values of TOC compared to carbonates, as such, porosity (Ф) is most likely to be higher in shales compared to carbonates. The increase in Ф corresponds to the increase in K (in both rocks). Nonetheless, at lower values of Ф, K is higher in carbonates compared to shales. This shows that at lower values of TOC in carbonates, Ф is low, yet, K is likely to be high compared to shale. In the same vein, at higher values of TOC in shales, Ф is high, yet, K is expected to be low compared to carbonates. Overall, the flow unit factors (RQI and FZI) are better in the carbonates compared to the shales. Moreso, within the study location, there are some portions where the thicknesses of the carbonate units are higher compared to the shale units. Most parts of the carbonate strata in the study location are fractured in situ, hence, this could provide easy access for the storage of CO2. Therefore, based on these points and the disparities between the flow units in the evaluated rock types, the carbonate units are expected to show better potentials for the storage of CO2. The shale units may be considered as potential cap rocks or seals.

Abstract:
Among various water resources, the surface water has a dominant role in providing water supply in the arid and semi-arid region of Iran. Andarokh-Kardeh basin is located in 50 km from Mashhad city - the second biggest city of Iran (NE of Iran), draining by Kardeh river which provides a significant portion of potable and irrigation water needs for Mashhad. The stable isotopes (18O, 2H,13C-DIC, and 13C-DOC), as reliable and precious water fingerprints, have been measured in Kardeh river (Kharket, Mareshk, Jong, All and Kardeh stations) and in Kardeh dam reservoirs (at five different sites S1 to S5) during March to June 2011 and June 2012. On δ18O vs. δ2H diagram, the river samples were plotted between Global and Eastern Mediterranean Meteoric Water lines (GMWL and EMMWL) which demonstrate that various moisture sources are providing humidity for precipitation events in this area. The enriched δ18O and δ2H values (-6.5 ‰ and -44.5 ‰ VSMOW) of Kardeh dam reservoir are compared to Kardeh river (-8.6‰and-54.4‰), and its deviation from Mashhad meteoric water line (MMWL- δ2H=7.16δ18O+11.22) is due to evaporation from the open surface water body. The enriched value of δ 13C-DIC and high amount of DIC values (-7.9 ‰ VPDB and 57.23 ppm) in the river and Kardeh dam reservoir (-7.3 ‰ VPDB and 55.53 ppm) is due to dissolution of Mozdooran Carbonate Formation lithology (Jm1 to Jm3 units) (contains enriched δ13C DIC values of 9.2‰ to 27.7‰ VPDB) in the region. Because of the domination of C3 vegetations in Andarokh_Kardeh basin, the δ13C-DOC isotope of the river (-28.4‰ VPDB) and dam reservoir (-32.3‰ VPDB) demonstrate depleted values. Higher DOC concentration in dam reservoir (2.57 ppm) compared to the river (0.72 ppm) is due to more biologogical activities and organic matters in dam reservoir.

The nullity η(G) of a graph is the occurrence of zero as an eigenvalue in its spectra. A zero-sum weighting of a graph G is real valued function, say f from vertices of G to the set of real numbers, provided that for each vertex of G the summation of the weights f(w) over all neighborhood w of v is zero for each v in G.A high zero-sum weighting of G is one that uses maximum number of non-zero independent variables. If G is graph with an end vertex, and if H is an induced subgraph of G obtained by deleting this vertex together with the vertex adjacent to it, then, η(G)= η(H). In this paper, a high zero-sum weighting technique and the endvertex procedure are applied to evaluate the nullity of t-tupple and generalized t-tupple graphs are derived and determined for some special types of graphs,
Also, we introduce and prove some important results about the t-tupple coalescence, Cartesian and Kronecker products of nut graphs.

Abstract:
The objectives of this study is to investigate the impact of culture on advertising appeals in mobile phone industry via social media channel in UK, Brazil and India. Content analysis on Samsung and Nokia commercials in YouTube is conducted. The result indicates that the advertising appeals are both congruent and incongruent with cultural dimensions in UK, Brazil and India. The result suggests that Hofstede and value paradoxes might be the tools to predict the relationship between cultural values and advertising appeals.

Abstract:
The tree structured approach of non-uniform filterbank (NUFB) is normally used in perfect reconstruction (PR). The PR is not always feasible due to certain limitations, i.e, constraints in selecting design parameters, design complexity and some times output is severely affected by aliasing error if necessary and sufficient conditions of PR is not satisfied perfectly. Therefore, there has been generalized interest of researchers to go for near perfect reconstruction (NPR). In this proposed work, an optimized tree structure technique is used for the design of NPR non-uniform filterbank. Window functions of Blackman family are used to design the prototype FIR filter. A single variable linear optimization is used to minimize the amplitude distortion. Abstract:
The Improved Generalized Diversity Index (IGDI) has been proposed as a tool that can be used to identify areas that have high conservation value and measure the ecological condition of an area. IGDI is based on the species relative abundances. This paper is concerned with particular attention is given to comparisons involving the MacArthur model of species abundances. The properties and performance of various species indices were assessed. Both IGDI and species richness increased with sampling area according to a power function. Abstract:
This work presents the first results from the long-term laboratory experiment dealing with impact of drought on soil properties. Three groups of the treatment (A, B and C) with different regime of irrigation were prepared. The soil water content was maintained at 70 % of soil water holding capacity in group A, at 40 % in group B. In group C, soil water regime was maintained in the range of wilting point. Each group of the experiment was divided into three variants (A1 = B1, C1; A2 = B2, C2 etc.) with three repetitions: Variants A1 (B1, C1) were a controls without addition of another fertilizer. Variants A2 (B2, C2) were fertilized with mineral nitrogen fertilizer DAM 390 (0.140 Mg of N per ha) and variants A3 (B3, C3) contained 45 g of Cp per a pot.
The significant differences (ANOVA, P<0.05) in the leaching of mineral nitrogen and values of saturated hydraulic conductivity (Ksat) were found. The highest values of Ksat were found in variants (within each group) with addition of compost (A3, B3, C3). Conversely, the lowest values of Ksat were found in variants with addition of mineral nitrogen. Low values of Ksat indicate an increased level of hydrophobicity in individual groups of the experiment. Moreover, all variants with compost addition showed lower amount of mineral nitrogen leaching and high level of microbial activity than variants without. This decrease of mineral nitrogen leaching was about 200 % in comparison with the control variant and about 300 % with variant, where mineral nitrogen was added. Based on these results, we can conclude that changes of soil water content directly have impact on microbial activity, soil hydrophobicity and loss of mineral nitrogen from soil.

Abstract:
The study explores the use of binders and additives, such as Portland cement, pulverized fuel ash, ground granulated blast furnace slag, and MgO, to reduce the concentration and leachability of pollutants in contaminated site soils. The research investigates their effectiveness and associated risks of binders, with a focus on Total Heavy Metals (THM) and Total Petroleum Hydrocarbon (TPH). The goal of this research is to evaluate the performance and effectiveness of binders and additives in remediating soil pollutants. The study aims to assess the suitability of the mixtures for ground improvement purposes, determine the optimal dosage, and investigate the associated risks. The research utilizes physical (unconfined compressive strength) and chemical tests (batch leachability test) to assess the efficacy of the binders and additives. A completely randomized design one-way ANOVA is used to determine the significance within mix binders of THM. The study also employs incremental lifetime cancer risk (ILCR) assessments and other indices to evaluate the associated risks. The study finds that Ground Granulated Blast Furnace Slag (GGBS): MgO is the most effective binder for remediation, particularly when using low dosages of MgO combined with higher dosages of GGBS binders on TPH. The results indicate that binders and additives can encapsulate and immobilize pollutants, thereby reducing their leachability and toxicity. The mean unconfined compressive strength of the soil ranges from 285.0-320.5 kPa, while THM levels with a combination of Ground granulated blast furnace slag and Magnesium oxide, Portland cement and Pulverised fuel ash were less than 10 µg/l. Portland cement was below 1 µg/l. The ILCR ranged from 6.77E-02 - 2.65E-01 and 5.444E-01 - 3.20 E+00, with the highest values observed under extreme conditions. The hazard index (HI), risk allowable daily dose intake (ADI), and risk chronic daily intake (CDI) were all less than 1 for the THM. The study identifies MgO as the best additive for use in soil remediation.

Architectural form of a building has impact on space heating and cooling energy use, however the interrelationship between the geometry and resultant energy use is not always readily apparent. Data Envelopment Analysis (DEA) is a methodology that computes efficiency values for decision making units (DMU) in a given period by comparing the outputs with the inputs. In many cases, there are some time lag between the consumption of inputs and the production of outputs. For a long-term research project, it is hard to avoid the production lead time phenomenon. This time lag effect should be considered in evaluating the performance of organizations. This paper suggests a model to calculate efficiency values for the performance evaluation problem with time lag. Clustering categorical data is more complicated than the numerical clustering because of its special properties. Scalability and memory constraint is the challenging problem in clustering large data set. This paper presents an incremental algorithm to cluster the categorical data. Frequencies of attribute values contribute much in clustering similar categorical objects. In this paper we propose new similarity measures based on the frequencies of attribute values and its cardinalities. The proposed measures and the algorithm are experimented with the data sets from UCI data repository. The fatigue life of tubular joints commonly found in offshore industry is not only dependent on the value of hot-spot stress (HSS), but is also significantly influenced by the through-thethickness stress distribution characterized by the degree of bending (DoB). The determination of DoB values in a tubular joint is essential for improving the accuracy of fatigue life estimation using the stresslife (S–N) method and particularly for predicting the fatigue crack growth based on the fracture mechanics (FM) approach. In the present paper, data extracted from finite element (FE) analyses of tubular KT-joints, verified against experimental data and parametric equations, was used to investigate the effects of geometrical parameters on DoB values at the crown 0°, saddle, and crown 180° positions along the weld toe of central brace in tubular KT-joints subjected to axial loading. Parametric study was followed by a set of nonlinear regression analyses to derive DoB parametric formulas for the fatigue analysis of KT-joints under axial loads. The tubular KTjoint is a quite common joint type found in steel offshore structures. However, despite the crucial role of the DoB in evaluating the fatigue performance of tubular joints, this paper is the first attempt to study and formulate the DoB values in KT-joints.Keywords: Tubular KT-joint, fatigue, degree of bending (DoB), axial loading, parametric formula.

Abstract:
The paper provides a numerical investigation of the entropy generation analysis due to natural convection in an inclined square porous cavity. The coupled equations of mass, momentum, energy and species conservation are solved using the Control Volume Finite-Element Method. Effect of medium permeability and inclination angle on entropy generation is analysed. It was found that according to the Darcy number and the porous thermal Raleigh number values, the entropy generation could be mainly due to heat transfer or to fluid friction irreversibility and that entropy generation reaches extremum values for specific inclination angles.Keywords: Porous media, entropy generation, convection, numerical method.

By use of the interpolation technique instead of the generalized elliptic projection, the optimal error estimates of the corresponding unknown function are given.

In this study, the relationships between body as well as bone mineral profile and the percentage as well as mass values of fat, fat-free portion, protein, skeletal muscle were evaluated in adult men with normal body mass index (N-BMI), and those classified according to different stages of obesity. A total of 103 adult men classified into five groups participated in this study. Ages were within 19-79 years range. Groups were N-BMI (Group 1), overweight (OW) (Group 2), first level of obesity (FLO) (Group 3), second level of obesity (SLO) (Group 4) and third level of obesity (TLO) (Group 5). Anthropometric measurements were performed. BMI values were calculated. Obesity degree, total body fat mass, fat percentage, basal metabolic rate (BMR), visceral adiposity, body mineral mass, body mineral percentage, bone mineral mass, bone mineral percentage, fat-free mass, fat-free percentage, protein mass, protein percentage, skeletal muscle mass and skeletal muscle percentage were determined by TANITA body composition monitor using bioelectrical impedance analysis technology. Statistical package (SPSS) for Windows Version 16.0 was used for statistical evaluations. The values below 0.05 were accepted as statistically significant. All the groups were matched based upon age (p > 0.05). BMI values were calculated as 22.6 ± 1.7 kg/m2, 27.1 ± 1.4 kg/m2, 32.0 ± 1.2 kg/m2, 37.2 ± 1.8 kg/m2, and 47.1 ± 6.1 kg/m2 for groups 1, 2, 3, 4, and 5, respectively. Visceral adiposity and BMR values were also within an increasing trend. Percentage values of mineral, protein, fat-free portion and skeletal muscle masses were decreasing going from normal to TLO. Upon evaluation of the percentages of protein, fat-free portion and skeletal muscle, statistically significant differences were noted between NW and OW as well as OW and FLO (p < 0.05). However, such differences were not observed for body and bone mineral percentages. Correlation existed between visceral adiposity and BMI was stronger than that detected between visceral adiposity and obesity degree. Correlation between visceral adiposity and BMR was significant at the 0.05 level. Visceral adiposity was not correlated with body mineral mass but correlated with bone mineral mass whereas significant negative correlations were observed with percentages of these parameters (p < 0.001). BMR was not correlated with body mineral percentage whereas a negative correlation was found between BMR and bone mineral percentage (p < 0.01). It is interesting to note that mineral percentages of both body as well as bone are highly affected by the visceral adiposity. Bone mineral percentage was also associated with BMR. From these findings, it is plausible to state that minerals are highly associated with the critical stages of obesity as prominent parameters.

Abstract:
Study of fire and explosion is very important mainly in oil and gas industries due to several accidents which have been reported in the past and present. In this work, we have investigated the flammability of bio oil vapour mixtures. This mixture may contribute to fire during the storage and transportation process. Bio oil sample derived from Palm Kernell shell was analysed using Gas Chromatography Mass Spectrometry (GC-MS) to examine the composition of the sample. Mole fractions of 12 selected components in the liquid phase were obtained from the GC-FID data and used to calculate mole fractions of components in the gas phase via modified Raoult-s law. Lower Flammability Limits (LFLs) and Upper Flammability Limits (UFLs) for individual components were obtained from published literature. However, stoichiometric concentration method was used to calculate the flammability limits of some components which their flammability limit values are not available in the literature. The LFL and UFL values for the mixture were calculated using the Le Chatelier equation. The LFLmix and UFLmix values were used to construct a flammability diagram and subsequently used to determine the flammability of the mixture. The findings of this study can be used to propose suitable inherently safer method to prevent the flammable mixture from occurring and to minimizing the loss of properties, business, and life due to fire accidents in bio oil productions.Keywords: Gas chromatography, compositions, lower and upper flammability limits (LFL & UFL), flammability diagram.

Abstract:
Vertex Enumeration Algorithms explore the methods and procedures of generating the vertices of general polyhedra formed by system of equations or inequalities. These problems of enumerating the extreme points (vertices) of general polyhedra are shown to be NP-Hard. This lead to exploring how to count the vertices of general polyhedra without listing them. This is also shown to be #P-Complete. Some fully polynomial randomized approximation schemes (fpras) of counting the vertices of some special classes of polyhedra associated with Down-Sets, Independent Sets, 2-Knapsack problems and 2 x n transportation problems are presented together with some discovered open problems.Keywords: Approximation, counting with uncertainties, mathematical programming, optimization, vertex enumeration.

In this paper, x-ray impact of Taguchi method and design of experiment philosophy to project relationship between various factors leading to output yield strength of rebar is studied. In bar mill of an integrated steel plant, there are two production lines called as line 1 and line 2. The metallic properties e.g. yield strength of finished product of the same material is varying for a particular grade material when rolled simultaneously in both the lines. A study has been carried out to set the process parameters at optimal level for obtaining equal value of yield strength simultaneously for both lines.

The results of this paper generalized previously known results.

Abstract:
This study investigated the pattern and seasonal index of influenza cases in Thailand. Our results showed that southern Thailand had the highest influenza incidence among the four regions of Thailand (i.e. north, northeast, central and southern Thailand). The influenza pattern in southern Thailand was similar to that of northeastern Thailand. Seasonal index values of influenza cases in Thailand were higher in the hot season than in the wet season. Influenza cases started to increase at the beginning of the hot season (April), reached a maximum in August, rapidly declined in the middle of the wet season and reached the lowest value in December. Seasonal index values for northern Thailand differed from other regions of Thailand.

Abstract:
Image Searching was always a problem specially when these images are not properly managed or these are distributed over different locations. Currently different techniques are used for image search. On one end, more features of the image are captured and stored to get better results. Storing and management of such features is itself a time consuming job. While on the other extreme if fewer features are stored the accuracy rate is not satisfactory. Same image stored with different visual properties can further reduce the rate of accuracy. In this paper we present a new concept of using polynomials of sorted histogram of the image. This approach need less overhead and can cope with the difference in visual features of image.

Abstract:
We propose photo-BJMOSFET (Bipolar Junction Metal-Oxide-Semiconductor Field Effect Transistor) fabricated on SOI film. ITO film is adopted in the device as gate electrode to reduce light absorption. I-V characteristics of photo-BJMOSFET obtained in dark (dark current) and under 570nm illumination (photo current) are studied furthermore to achieve high photo-to-dark-current contrast ratio. Two variables in the calculation were the channel length and the thickness of the film which were set equal to six different values, i.e., L=2, 4, 6, 8, 10, and 12μm and three different values, i.e., dsi =100, 200 and 300nm, respectively. The results indicate that the greatest photo-to-dark-current contrast ratio is achieved with L=10μm and dsi=200 nm at VGK=0.6V.

Abstract:
The focus in this work is to assess which method allows a better forecasting of malaria cases in Bujumbura ( Burundi) when taking into account association between climatic factors and the disease. For the period 1996-2007, real monthly data on both malaria epidemiology and climate in Bujumbura are described and analyzed. We propose a hierarchical approach to achieve our objective. We first fit a Generalized Additive Model to malaria cases to obtain an accurate predictor, which is then used to predict future observations. Various well-known forecasting methods are compared leading to different results. Based on in-sample mean average percentage error (MAPE), the multiplicative exponential smoothing state space model with multiplicative error and seasonality performed better.Keywords: Burundi, Forecasting, Malaria, Regressionmodel, State space model.

Abstract:
Nodes in mobile Ad Hoc Network (MANET) do not rely on a central infrastructure but relay packets originated by other nodes. Mobile ad hoc networks can work properly only if the participating nodes collaborate in routing and forwarding. For individual nodes it might be advantageous not to collaborate, though. In this conceptual paper we propose a new approach based on relationship among the nodes which makes them to cooperate in an Adhoc environment. The trust unit is used to calculate the trust values of each node in the network. The calculated trust values are being used by the relationship estimator to determine the relationship status of nodes. The proposed enhanced protocol was compared with the standard DSR protocol and the results are analyzed using the network simulator-2.Keywords: Reliable Routing, DSR, Grudger, Adhoc network.
