2335 Quality Characterization of Burger Affected by Soybean Additives (Natto & Protein Hydrolysate) and Ascorbic Acid
Authors: Marwa H. Mahmoud, Ferial M. Abu-Salem
Abstract:
Soy protein is a common ingredient added to processed meats to enhance its functional characteristics. In our study, soybean products (fermented soy Natto and protein hydrolysate) containing hydrolyzed peptides and amino acids, with or without ascorbic acid were added to burger in order to improve its quality characteristics. Results showed that soy additives significantly increased moisture and protein content and reduced (P < 0.05) fat values. Ash content did not affect with Natto additive. Color tools, lightness and yellowness were higher (P<0.05) for the samples with added soybean products (with or without ascorbic acid), while redness decreased. Both of protein hydrolysate and ascorbic acid increased the softiness while, Natto additive increased the hardness of samples. Natto & protein hydrolysate additives increased the total volatile basic nitrogen while, samples with ascorbic acid decreased TVBN values at significant levels. Also, soy additives were improved both of cooking quality and sensory evaluation of the burger in order to prove that soy products actually affect the quality characteristics of meat products.

Abstract:
The setting agent Ca(OH)2 for activation of slag cement is used in the proportions of 0%, 2%, 4%, 6%, 8% and 10% by various methods (substitution and addition by mass of slag cement). The physical properties of slag cement activated by the calcium hydroxide at anhydrous and hydrated states (fineness, particle size distribution, consistency of the cement pastes and setting times) were studied. The activation method by the mineral activator of slag cement (latent hydraulicity) accelerates the hydration process and reduces the setting times of the cement activated. Keywords: Mineral activator, slag cement, Anhydrous and hydrated states, physical characteristics.

Authors: D. H. Lee, Nur Irmawati
Abstract:
This paper aims to study the heat transfer and fluid flow characteristics of nanofluids used in spray cooling systems. The effect of spray height, type of nanofluids and concentration of nanofluids are numerically investigated. Five different nanofluids such as AgH2O, Al2O3, CuO, SiO2 and TiO2 with volume fraction range of 0.5% to 2.5% are used. The results revealed that the heat transfer performance decreases as spray height increases. It is found that TiO2 has the highest transfer coefficient among other nanofluids. In dilute spray conditions, low concentration of nanofluids is observed to be more effective in heat removal in a spray cooling system. Keywords: Numerical simulation, Spray cooling, Heat transfer, Nanofluids.

Authors: Andrés Carrión García, Aura López de Murillo, José Jabaloyes Vivas, Angela Grisales del Río
Abstract:
Some quality control tools use non metric subjective information coming from experts, who qualify the intensity of relations existing inside processes, but without quantifying them. In this paper we have developed a quality control analytic tool, measuring the impact or strength of the relationship between process operations and product characteristics. The tool includes two models: a qualitative model, allowing relationships description and analysis; and a formal quantitative model, by means of which relationship quantification is achieved. In the first one, concepts from the Graphs Theory were applied to identify those process elements which can be sources of variation, that is, those quality characteristics or operations that have some sort of prelacy over the others and that should become control items. Also the most dependent elements can be identified, that is those elements receiving the effects of elements identified as variation sources. If controls are focused in those dependent elements, efficiency of control is compromised by the fact that we are controlling effects, not causes. The second model applied adapts the multivariate statistical technique of Covariance Structural Analysis. This approach allowed us to quantify the relationships. The computer package LISREL was used to obtain statistics and to validate the model.

Authors: Zhenzhen Xu, Chunfu Shao, Shengyou Wang, Chunjiao Dong
Abstract:
To improve the satisfaction of residents' travel, this paper analyzes the characteristics and influencing factors of urban residents' travel behavior. First, a Multinominal Logit Model (MNL) model is built to analyze the characteristics of residents' travel behavior, reveal the influence of individual attributes, family attributes and travel characteristics on the choice of travel mode, and identify the significant factors. Then put forward suggestions for policy improvement. Finally, Support Vector Machine (SVM) and Multi-Layer Perceptron (MLP) models are introduced to evaluate the policy effect. This paper selects Futian Street in Futian District, Shenzhen City for investigation and research. The results show that gender, age, education, income, number of cars owned, travel purpose, departure time, journey time, travel distance and times all have a significant influence on residents' choice of travel mode. Based on the above results, two policy improvement suggestions are put forward from reducing public transportation and non-motor vehicle travel time, and the policy effect is evaluated. Before the evaluation, the prediction effect of MNL, SVM and MLP models was evaluated. After parameter optimization, it was found that the prediction accuracy of the three models was 72.80%, 71.42%, and 76.42%, respectively. The MLP model with the highest prediction accuracy was selected to evaluate the effect of policy improvement. The results showed that after the implementation of the policy, the proportion of public transportation in plan 1 and plan 2 increased by 14.04% and 9.86%, respectively, while the proportion of private cars decreased by 3.47% and 2.54%, respectively. The proportion of car trips decreased obviously, while the proportion of public transport trips increased. It can be considered that the measures have a positive effect on promoting green trips and improving the satisfaction of urban residents, and can provide a reference for relevant departments to formulate transportation policies. Keywords: Travel characteristics analysis, transportation choice, travel sharing rate, neural network model, traffic resource allocation.

Authors: Ibrahim S. Alnomay, Jihad Y. Alhammad
Abstract:
Lately, an interest has grown greatly in the usages of RFID in an un-presidential applications. It is shown in the adaptation of major software companies such as Microsoft, IBM, and Oracle the RFID capabilities in their major software products. For example Microsoft SharePoints 2010 workflow is now fully compatible with RFID platform. In addition, Microsoft BizTalk server is also capable of all RFID sensors data acquisition. This will lead to applications that required high bit rate, long range and a multimedia content in nature. Higher frequencies of operation have been designated for RFID tags, among them are the 2.45 and 5.8 GHz. The higher the frequency means higher range, and higher bit rate, but the drawback is the greater cost. In this paper we present a single layer, low profile patch antenna operates at 5.8 GHz with pure resistive input impedance of 50 and close to directive radiation. Also, we propose a modification to the design in order to improve the operation band width from 8.7 to 13.8Keywords: Microstrip Antenna, RFID, U-shaped, double layer, circular antenna.

Abstract:
The measurement of aerodynamic forces and moments acting on an aircraft model is important for the development of wind tunnel measurement technology to predict the performance of the full scale vehicle. The potentials of an aircraft model with and without winglet and aerodynamic characteristics with NACA wing No. 65-3- 218 have been studied using subsonic wind tunnel of 1 m × 1 m rectangular test section and 2.5 m long of Aerodynamics Laboratory Faculty of Engineering (University Putra Malaysia). Focusing on analyzing the aerodynamic characteristics of the aircraft model, two main issues are studied in this paper. First, a six component wind tunnel external balance is used for measuring lift, drag and pitching moment. Secondly, Tests are conducted on the aircraft model with and without winglet of two configurations at Reynolds numbers 1.7×105, 2.1×105, and 2.5×105 for different angle of attacks. Fuzzy logic approach is found as efficient for the representation, manipulation and utilization of aerodynamic characteristics. Therefore, the primary purpose of this work was to investigate the relationship between lift and drag coefficients, with free-stream velocities and angle of attacks, and to illustrate how fuzzy logic might play an important role in study of lift aerodynamic characteristics of an aircraft model with the addition of certain winglet configurations. Results of the developed fuzzy logic were compared with the experimental results. For lift coefficient analysis, the mean of actual and predicted values were 0.62 and 0.60 respectively. The coreelation between actual and predicted values (from FLS model) of lift coefficient in different angle of attack was found as 0.99. The mean relative error of actual and predicted valus was found as 5.18% for the velocity of 26.36 m/s which was found to be less than the acceptable limits (10%). The goodness of fit of prediction value was 0.95 which was close to 1.0.Keywords: Wind tunnel; Winglet; Lift coefficient; Fuzzy logic.

Abstract:
Power-line networks are widely used today for broadband data transmission. However, due to multipaths within the broadband power line communication (BPLC) systems owing to stochastic changes in the network load impedances, branches, etc., network or channel capacity performances are affected. This paper attempts to investigate the performance of typical medium voltage channels that uses Orthogonal Frequency Division Multiplexing (OFDM) techniques with Quadrature Amplitude Modulation (QAM) sub carriers. It has been observed that when the load impedances are different from line characteristic impedance channel performance decreases. Also as the number of branches in the link between the transmitter and receiver increases a loss of 4dB/branch is found in the signal to noise ratio (SNR). The information presented in the paper could be useful for an appropriate design of the BPLC systems.

Abstract:
In this work new macroporous Ni electrodes modified with Au nanoparticles for hydrogen production have been developed. The supporting macroporous Ni electrodes have been obtained by means of the electrodeposition at high current densities. Then, the Au nanoparticles were synthesized and added to the electrode surface. The electrocatalytic behaviour of the developed electrocatalysts was studied by means of pseudo-steady-state polarization curves, electrochemical impedance spectroscopy (EIS) and hydrogen discharge curves. The size of the Au synthetized nanoparticles shows a monomodal distribution, with a very sharp band between 10 and 50 nm. The characteristic parameters d10, d50 and d90 were 14, 20 and 31 nm respectively. From Tafel polarization data has been concluded that the Au nanoparticles improve the catalytic activity of the developed electrodes towards the HER respect to the macroporous Ni electrodes. EIS permits to obtain the electrochemically active area by means of the roughness factor value. All the developed electrodes show roughness factor values in the same order of magnitude. From the activation energy results it can be concluded that the Au nanoparticles improve the intrinsic catalytic activity of the macroporous Ni electrodes. Keywords: Au nanoparticles, hydrogen evolution reaction, porous Ni electrodes.

Abstract:
The current-voltage (I-V) characteristics of Pd/n-GaN Schottky barrier were studied at temperatures over room temperature (300-470K). The values of ideality factor (n), zero-bias barrier height (φB0), flat barrier height (φBF) and series resistance (Rs) obtained from I-V-T measurements were found to be strongly temperature dependent while (φBo) increase, (n), (φBF) and (Rs) decrease with increasing temperature. The apparent Richardson constant was found to be 2.1x10-9 Acm-2K-2 and mean barrier height of 0.19 eV. After barrier height inhomogeneities correction, by assuming a Gaussian distribution (GD) of the barrier heights, the Richardson constant and the mean barrier height were obtained as 23 Acm-2K-2 and 1.78eV, respectively. The corrected Richardson constant was very closer to theoretical value of 26 Acm-2K-2.

Authors: A. P. Singh
Abstract:
The results reported in this paper are the part of an extensive laboratory investigation undertaken to study the effects of fibre parameters on the permeability and strength characteristics of steel fibre reinforced concrete (SFRC). The effect of varying fibre content and curing age on the water permeability, compressive and split tensile strengths of SFRC was investigated using straight steel fibres having an aspect ratio of 65. Samples containing three different weight fractions of 1.0%, 2.0% and 4.0% were cast and tested for permeability and strength after 7, 14, 28 and 60 days of curing. Plain concrete samples were also cast and tested for reference purposes.
Permeability was observed to decrease significantly with the addition of steel fibres and continued to decrease with increasing fibre content and increasing curing age. An exponential relationship was observed between permeability and compressive and split tensile strengths for SFRC as well as PCC. To evaluate the effect of fibre content on the permeability and strength characteristics, the Analysis of Variance (ANOVA) statistical method was used. An a level (probability of error) of 0.05 was used for ANOVA test. Regression analysis was carried out to develop relationship between permeability, compressive strength and curing age.

Abstract:
A CFD software was employed to analyze the characteristics of the flat round porous aerostatic bearings. The effects of gap between the bearing and the guide way and the porosity of the porous material on the load capacity of the bearing were studied. The adequacy of the simulation model and the approach was verified. From the parametric study, it is found that the depth of the flow path does not influence the load capacity of the bearing; the load capacity of the bearing will decrease if the thickness of the porous material increases or the porous material protrudes above the bearing housing; the variation of the chamfer at the edge of the bearing does not affect the bearing load capacity. For a bearing with an air gap of 5μm and a porosity of 0.1, the average load capacity and the pressure distribution of the bearing are nearly unchanged no matter the bearing moves at a constant or a varying speed.

Canna indica is a prominent species complex in tropical and subtropical areas. They become indigenous in Southeast Asia where they have been introduced. At present, C. indica complex comprises over hundred hybrids, are cultivated as commercial horticulture. The species complex contains starchy rhizome having economic value in terms of food and herbal medicine. In addition, bright color of the flowers makes it a valuable ornamental plant and potential source for natural colorant. This study aims to assess genetic diversity of four varieties of C. indica complex based on SRAP (sequence-related amplified polymorphism) and iPBS (inter primer binding site) markers. We also examined phytochemical characteristics and antioxidant properties of the flower extracts from four different color varieties. Results showed that despite of the genetic variation, there were no significant differences in phytochemical characteristics and antioxidant properties of flowers. The SRAP and iPBS results agree with the more primitive traits showed by morphological information and phytochemical and antioxidant characteristics from the flowers. Since Canna flowers has long been used as natural colorants together with the antioxidant activities from the ethanol extracts in this study, there are likely to be good source for cosmetics additives.

The main characteristics of SOM are two-fold, namely dimension reduction and topology preservation. Using SOM, a high-dimensional data space will be mapped to some low-dimensional space. Meanwhile, the topological relations among data will be preserved. With such characteristics, the SOM was usually applied on data clustering and visualization tasks. However, the SOM has main disadvantage of the need to know the number and structure of neurons prior to training, which are difficult to be determined. Several schemes have been proposed to tackle such deficiency. Examples are growing/expandable SOM, hierarchical SOM, and growing hierarchical SOM. These schemes could dynamically expand the map, even generate hierarchical maps, during training. Encouraging results were reported. Basically, these schemes adapt the size and structure of the map according to the distribution of training data. That is, they are data-driven or dataoriented SOM schemes. In this work, a topic-oriented SOM scheme which is suitable for document clustering and organization will be developed. The proposed SOM will automatically adapt the number as well as the structure of the map according to identified topics. Unlike other data-oriented SOMs, our approach expands the map and generates the hierarchies both according to the topics and their characteristics of the neurons. The preliminary experiments give promising result and demonstrate the plausibility of the method.

Abstract:
This paper present a mechanical characteristics on fatigue crack propagation in Aluminium Plate based on strain and stress distribution using the abaqus software. The changes in shear strain and stress distribution during the fatigue cycle with crack growth is identified. In progressive crack in the strain distribution and the stress is increase in the critical zone. Numerical Modal analysis of the model developed, prove that the Eigen frequencies of aluminium plate were decreased after cracking, and this reduce is nonlinear. These results can provide a reference for analysts and designers of aluminium alloys in aeronautical systems.
Therefore, the modal analysis is an important factor for monitoring the aeronautic structures.
