4364 Enhanced Coagulation of Disinfection By-Products Precursors in Porsuk Water Resource, Eskisehir

Abstract:
Natural organic matter (NOM) is heterogeneous mixture of organic compounds that enter the water media from animal and plant remains, domestic and industrial wastes. Researches showed that NOM is likely precursor material for disinfection by products (DBPs). Chlorine very commenly used for disinfection purposes and NOM and chlorine reacts then Trihalomethane (THM) and Haloacetic acids (HAAs) which are cancerogenics for human health are produced. The aim of the study is to search NOM removal by enhanced coagulation from drinking water source of Eskisehir which is supplied from Porsuk Dam. Recently, Porsuk dam water is getting highly polluted and therefore NOM concentration is increasing. Enhanced coagulation studies were evaluated by measurement of Dissolved Organic Carbon (DOC), UV absorbance at 254 nm (UV254), and different trihalomethane formation potential (THMFP) tests. Results of jar test experiments showed that NOM can be removed from water about 40-50 % of efficiency by enhanced coagulation. The advent of information technology and electronic data transmission lead to easy communication and fields like e-learning and e-commerce, are accessible for everyone easily. One of these technologies is virtual training. The "quality" of such kind of education systems is critical. 131 questionnaires were prepared and distributed among university student in Toba University. So the research has followed factors that affect the quality of learning from the perspective of staff, students, professors and this type of university. It is concluded that the important factors in virtual training are the quality of professors, the quality of staff, and the quality of the university. Abstract:
The increased use of biodiesel implies variations on both greenhouse gases and air pollutant emissions. Some studies point out that the use of biodiesel blends on diesel can help in controlling air pollution and promote a reduction of CO2 emissions. Reductions on PM, SO2, VOC and CO emissions are also expected, however NOx emissions may increase, which may potentiate O3 formation. This work aims to assess the impact of the biodiesel use on air quality, through a numerical modeling study, taking the Northern region of Portugal as a case study. The emission scenarios are focused on 2008 (baseline year) and 2020 (target year of Renewable Energy Directive-RED) and on three biodiesel blends (B0, B10 and B20). In a general way the use of biodiesel by 2020 will reduce the CO2 and air pollutants emissions in the Northern Portugal, improving air quality. However it will be in a very small extension.

Abstract:
This work presents a study on the abrasive water jet (AWJ) machining. An explicit finite element analysis (FEA) of single abrasive particle impact on stainless steel 1.4304 (AISI 304) is conducted. The abrasive water jet machining is modeled by FEA software ABAQUS/CAE. Shapes of craters in FEM simulation results were used and compared with the previous experimental and FEM works by means of crater sphericity. The influence of impact angle and particle velocity was observed. Adaptive mesh domain is used to model the impact zone. Results are in good agreement with those obtained from the experimental and FEM simulation. This article reports on hydrodynamic, mass transfer performances of fine bubble in a modified reactor. The quality of mixing in the modified reactor is discussed in the paper. Mass transfer efficiency based on quality of mixing is enunciated. To interpret the gas phase volume fraction and the quality of mixing is the empirical models for the modified system are developed.

Abstract:
The main objectives of this study were to identify attributes that influence customer satisfaction and determine their relationships with customer satisfaction. The variables included in this research are place/ambience, food quality and service quality as independent variables and customer satisfaction as the dependent variable. A survey questionnaire which consisted of three parts to measure demographic factors, independent variables, and dependent variables was constructed based on items determined by past research. 149 respondents from one of the well known hotel in Kuala Lumpur, MALAYSIA were selected as a sample. Psychometric testing was conducted to determine the reliability and validity of the questionnaire. From the findings, there were positive significant relationship between place/ambience (r=0.563**, p=0.000) and service quality (r=0.544**, p=0.000) with customer satisfaction. However, although relationship between food quality and customer satisfaction was significant, it was in the negative direction (r=- 0.268**, p=0.001). New findings were discovered after conducting this research and previous research findings were strengthened by the results of this research. Future researchers could concentrate on determining attributes that influence customer satisfaction when cost/price is not a factor and reasons for place/ambience is currently becoming the leading factor in determining customer satisfaction.Keywords: Ambience, Customer Satisfaction, Food Quality, Service Quality.

Abstract:
This paper presents an experimental investigation of transformer dielectric response and solid insulation water content. The dielectric response was carried out on the base of Hybrid Frequency Dielectric Spectroscopy and Polarization Current measurements method (FDS &PC). The calculation of the water content in paper is based on the water content in oil and the obtained equilibrium curves. A reference measurements were performed at equilibrium conditions for water content in oil and paper of transformer at different stable temperatures (25, 50, 60 and 70°C) to prepare references to evaluate the insulation behavior at the not equilibrium conditions. Some measurements performed at the different simulated normal working modes of transformer operation at the same temperature where the equilibrium conditions. The obtained results show that when transformer temperature is mach more than the its ambient temperature, the transformer temperature decreases immediately after disconnecting the transformer from the network and this temperature reduction influences the transformer insulation condition in the measuring process. In addition to the oil temperature at the near places to the sensors, the temperature uniformity in transformer which can be changed by a big change in the load of transformer before the measuring time will influence the result. The investigations have shown that the extremely influence of the time between disconnecting the transformer and beginning the measurements on the results. And the online monitoring for water content in paper measurements, on the basis of the oil water content on line monitoring and the obtained equilibrium curves. Abstract:
The popularity of quality management system models continues to grow despite the transitional crisis in 2008. Their development is associated with demands of the new requirements for entrepreneurs, such as risk analysis projects and more emphasis on supervision of outsourced processes. In parallel, it is appropriate to focus attention on the selection of companies aspiring to a quality management system. This is particularly important in the automotive supplier industry, where requirements transferred to the levels in the supply chain should be clear, transparent and fairly satisfied. The author has carried out a series of researches aimed at finding the factors that allow for the effective implementation of the quality management system in automotive companies. The research was focused on four groups of companies: 1) manufacturing (parts and assemblies for the purpose of sale or for vehicle manufacturers), 2) service (repair and maintenance of the car) 3) services for the transport of goods or people, 4) commercial (auto parts and vehicles). The identified determinants were divided into two types of criteria: internal and external, as well as hard and soft. The article presents the hard – technical factors that an automotive company must meet in order to achieve the goal of the quality management system implementation.Keywords: Automotive industry, quality management system.

Abstract:
Meshing is the process of discretizing problem domain into many sub domains before the numerical calculation can be performed. One of the most popular meshes among many types of meshes is tetrahedral mesh, due to their flexibility to fit into almost any domain shape. In both 2D and 3D domains, triangular and tetrahedral meshes can be generated by using Delaunay triangulation. The quality of mesh is an important factor in performing any Computational Fluid Dynamics (CFD) simulations as the results is highly affected by the mesh quality. Many efforts had been done in order to improve the quality of the mesh. The paper describes a mesh generation routine which has been developed capable of generating high quality tetrahedral cells in arbitrary complex geometry. A few test cases in CFD problems are used for testing the mesh generator. The result of the mesh is compared with the one generated by a commercial software. The results show that no sliver exists for the meshes generated, and the overall quality is acceptable since the percentage of the bad tetrahedral is relatively small. The boundary recovery was also successfully done where all the missing faces are rebuilt.Keywords: Mesh generation, tetrahedral, CFD, Delaunay.

Abstract:
The research was set up on chernozem soil at the Látókép AGTC MÉK research area of the University of Debrecen in Hungary. We examined the yield, the yield production per 1kg NPK fertilizer and the water and nutrient utilization of hybrid PR37N01 and PR37M81 in 2013. We found that PR37N01 produced the most yield at the level of N120+P (17,476kg ha-1) while PR37M81 reached the highest yield at level N150+PK (16,754kg ha-1). Studies related to yield production per 1kg NPK indicated that the best results were achieved at level N30+PK compared to the control treatment. Yield production per 1kg NPK was17.6kg kg-1 by P37N01 and 44.2kg kg-1 by PR37M81. By comparing the water utilization of hybrids we found that the worst water utilization results were reached in the control treatment (PR37N01: 26.2kg mm-1, PR37M81: 19.5kg mm-1). The best water utilization values were produced at level N120+PK in the case of hybrid PR37N01 (32.1kg mm-1) and at N150+PK in the case of hybrid PR37M81 (30.8kg mm-1). We established the values of the nutrient reaction and the fertilizer optimum of hybrids. We discovered a strong relationship between the amount of fertilizer applied and the yield produced (r2= 0.8228–0.9515). The best nutrient response was induced by hybrid PR37N01, while the weakest results were reached by hybrid PR37M81.

Abstract:
The purpose of this work is fast design optimization of the seal chamber. The study includes the mass transfer between lower and upper chamber on seal chamber for hot water application pumps. The use of Fluent 12.1 commercial code made it possible to capture complex flow with heat-mass transfer, radiation, Tailor instability, and buoyancy effect. Realizable k-epsilon model was used for turbulence modeling. Radiation heat losses were taken into account. The temperature distribution at seal region is predicted with respect to heat addition. Results show the possibilities of the model simplifications by excluding the water domain in low chamber from calculations. CFD simulations permit to improve seal chamber design to meet target water temperature around the seal. Development of levels of service in municipal context is a flexible vehicle to assist in performing quality-cost trade-off analysis for municipal services. This trade-off depends on the willingness of a community to pay as well as on the condition of the assets. Community perspective of the performance of an asset from service point of view may be quite different from the municipality perspective of the performance of the same asset from condition point of view. This paper presents a three phased level of service based methodology for water mains that consists of :1)development of an Analytical Hierarchy model of level of service 2) development of Fuzzy Weighted Sum model of water main condition index and 3) deriving a Fuzzy logic based function that maps level of service to asset condition index. Abstract:
Machine Learning and Data Mining are the two important tools for extracting useful information and knowledge from large datasets. In machine learning, classification is a wildly used technique to predict qualitative variables and is generally preferred over regression from an operational point of view. Due to the enormous increase in air pollution in various countries especially China, Air Quality Classification has become one of the most important topics in air quality research and modelling. This study aims at introducing a hybrid classification model based on information theory and Support Vector Machine (SVM) using the air quality data of four cities in China namely Beijing, Guangzhou, Shanghai and Tianjin from Jan 1, 2014 to April 30, 2016. China's Ministry of Environmental Protection has classified the daily air quality into 6 levels namely Serious Pollution, Severe Pollution, Moderate Pollution, Light Pollution, Good and Excellent based on their respective Air Quality Index (AQI) values. Using the information theory, information gain (IG) is calculated and feature selection is done for both categorical features and continuous numeric features. Then SVM Machine Learning algorithm is implemented on the selected features with cross-validation. The final evaluation reveals that the IG and SVM hybrid model performs better than SVM (alone), Artificial Neural Network (ANN) and K-Nearest Neighbours (KNN) models in terms of accuracy as well as complexity.

Service life of existing reinforced concrete (RC) structures in coastal towns of Sabah has been affected very much. Concrete crack, spalling of concrete cover and reinforcement rusting of RC buildings are seen even within 5 years of construction in Sabah. Hence, in this study a new mix design of concrete grout was developed using locally available materials and investigated under two curing conditions and workability, compressive strength, Accelerated Mortar Bar Test (AMBT), water absorption, volume of permeable voids (VPV), Sorptivity and 90-days salt ponding test were conducted. The compressive strength of concrete grout at the age 90 days was found to be 44.49 N/mm2 under water curing. It was observed that the percentage of mortar bar length change was below 1% for developed concrete grout. The water absorption of the concrete grout was in between the range of 0.88 % to 3.60 % under two different curing up to the age 90 days. It was also observed that the VPV of concrete was in the range of 0 % to 9.75 and 2.44% to 13.05% under water curing and site curing respectively. It was found that the Sorptivity of the concrete grout under water curing at the age of 28 days is 0.211mm/√min and at the age 90 day are 0.067 mm/√min. The chloride content decreased greatly, 90% after a depth of 15 mm. It was noticed that the site cured samples showed higher chloride contents near surface compared to water cured samples. This investigation suggested that the developed mix design of concrete grout using locally available construction materials can be used for crack repairing of existing RC structures in Sabah.Keywords: Concrete grout, Salt ponding, Sorptivity, Water absorption.

This research evaluated and compared the thermodynamic performance of heat pump systems which can be run under two different modes as air to air and air to water by using only one compressor. To achieve this comparison an experimental performance study was made on a traditional vapor compressed heat pump system that can be run air to air mode and air to water mode by help of a valve. The experiments made under different thermal conditions. Thermodynamic performance of the systems are presented and compared with each other for different working conditions.

Abstract:
We examine two-dimensional oil displacement by water in a petroleum reservoir. The pore fluid is immiscible, and the porous media is homogenous and isotropic in the horizontal direction. Buckley-Leverett theory and a combination of Laplacian and Darcy’s law are used to study the fluid flow through porous media, and the Laplacian that defines the dispersion and diffusion of fluid in the sand using heavy oil is discussed. The reservoir is homogenous in the horizontal direction, as expressed by the partial differential equation. Two main factors which are observed are the water saturation and pressure distribution in the reservoir, and they are evaluated for predicting oil recovery in two dimensions by a physical and mathematical simulation model. We review the numerical simulation that solves difficult partial differential reservoir equations. Based on the numerical simulations, the saturation and pressure equations are calculated by the iterative alternating direction implicit method and the iterative alternating direction explicit method, respectively, according to the finite difference assumption. However, to understand the displacement of oil by water and the amount of water dispersion in the reservoir better, an interpolated contour line of the water distribution of the five-spot pattern, that provides an approximate solution which agrees well with the experimental results, is also presented. Finally, a computer program is developed to calculate the equation for pressure and water saturation and to draw the pressure contour line and water distribution contour line for the reservoir.Keywords: Numerical simulation, immiscible, finite difference, IADI, IADE, waterflooding.

Abstract:
The paper deals with the analysis of hazards and sensitivity of potential resource of emergency water supply of population in a selected region of the Czech Republic. The procedure of identification and analysis of hazards and sensitivity is carried out on the basis of a unique methodology of classifying the drinking water resources earmarked for emergency supply of population. The hazard identification is based on a general register of hazards for individual parts of hydrological structure and the elements of technological equipment. It is followed by a semi-quantitative point indexation for the activation of each identified hazard, i.e. fires of anthropogenic origin, flood and the increased radioactive background accompanied by the leak of radon. Point indexation of sensitivity has been carried out at the same time. The analysis is the basis for a risk assessment of potential resource of emergency supply of population and the subsequent classification of such resource within the system of crisis planning.

We identify clawback triggers from firms- proxy statements (Form DEF 14A) and use the likelihood of restatements to proxy for financial reporting quality. Based on a sample of 578 U.S. firms that voluntarily adopt clawback provisions during 2003-2009, when restatement-based triggers could be decomposed into two types: fraud and unintentional error, and we do observe the evidence that using fraud triggers is associated with high financial reporting quality. The findings support that fraud triggers can enhance deterrent effect of clawback provision by establishing a viable disincentive against fraud, misconduct, and otherwise harmful acts. These results are robust to controlling for the compensation components, to different sample specifications and to a number of sensitivity.Keywords: Accruals quality, Clawback provisions, Compensation, Restatements.

Remote arid areas of the vast expanses of the African deserts hold huge subterranean reserves of brackish water resources waiting for economic development. This work presents design guidelines as well as initial performance data of new autonomous solar desalination equipment which could help local communities produce their own fresh water using solar energy only and, why not, contribute to transforming desert lands into lush gardens. The output of solar distillation equipments are typically low and in the range of 3 l/m2/day on the average. This new design with an integrated, water based, environmentally-friendly solar heat storage system produced 5 l/m2/day in early spring weather. Project managers are the ultimate responsible for the overall characteristics of a project, i.e. they should deliver the project on time with minimum cost and with maximum quality. It is vital for any manager to decide a trade-off between these conflicting objectives and they will be benefited of any scientific decision support tool. Our work will try to determine optimal solutions (rather than a single optimal solution) from which the project manager will select his desirable choice to run the project. In this paper, the problem in project scheduling notated as (1,T|cpm,disc,mu|curve:quality,time,cost) will be studied. The problem is multi-objective and the purpose is finding the Pareto optimal front of time, cost and quality of a project (curve:quality,time,cost), whose activities belong to a start to finish activity relationship network (cpm) and they can be done in different possible modes (mu) which are non-continuous or discrete (disc), and each mode has a different cost, time and quality . The project is constrained to a non-renewable resource i.e. money (1,T). Because the problem is NP-Hard, to solve the problem, a meta-heuristic is developed based on a version of genetic algorithm specially adapted to solve multi-objective problems namely FastPGA. European eels (Anguilla anguilla) belong to Anguilliformes order and Anguillidae family. They are generally classified as warm-water fish. Eels have a great commercial value in Europe and Asian countries. Eels can reach high weights, although their commercial size is relatively low in some countries. The capture of larger eels would facilitate the recovery of the species, as well as having a greater number of either glass eels or elvers for aquaculture. In the last years, the demand and the price of eels have increased significantly. However, European eel is considered critically endangered by the International Union for the Conservation of Nature (IUCN) Red List. The biochemical composition of fishes is an important aspect of quality and affects the nutritional value and consumption quality of fish. In addition, knowing this composition can help predict an individual’s condition for their recovery. Fish is known to be important source of protein rich in essential amino acids. However, there is very little information about changes in amino acids composition of European eels with increase in size. The aim of this study was to evaluate the effect of two different weight categories on the amino acids content in muscle tissue of wild European eels. European eels were caught in River Ulla (Galicia, NW Spain), during winter. The eels were slaughtered in ice water immersion. Then, they were purchased and transferred to the laboratory. The eels were subdivided into two groups, according to the weight. The samples were kept frozen (-20 °C) until their analysis. Frozen eels were defrosted and the white muscle between the head and the anal hole. was extracted, in order to obtain amino acids composition. Thirty eels for each group were used. Liquid chromatography was used for separation and quantification of amino a cids. The results conclude that the eels are rich in glutamic acid, leucine, lysine, threonine, valine, isoleucine and phenylalanine. The analysis showed that there are significant differences (p < 0.05) among the eels with different sizes. Histidine, threonine, lysine, hydroxyproline, serine, glycine, arginine, alanine and proline were higher in small eels. European eels muscle presents between 45 and 46% of essential amino acids in the total amino acids. European eels have a well-balanced and high quality protein source in the respect of E/NE ratio. However, eels with higher weight showed a better ratio of essential and non-essential amino acid.

This study developed a high efficient and combined biological and chemical filter treatment process. This process used PAC (Powder Activated Carbon), Alum and attached growth treatment process. The system removals of total nitrogen and total phosphorus ratio of two were as high as 70% and 73%, moreover, the effluent water was suitable to urban and agricultural water. Also the advantages of this process are not only occupies small place but is simple, economic and easy operating. Besides, our developed process can keep stable process efficiency even in relative low load level. Therefore, this study judges that use of the high efficient and combined biological and chemical filter treatment process, it is expected that the effluent water in this system can be reused as urban and agricultural water.Keywords: biological and chemical filter treatment, wastewaterreuse, PAC, Alum

Abstract:
Artificial Intelligence (AI) methods are increasingly being used for problem solving. This paper concerns using AI-type learning machines for power quality problem, which is a problem of general interest to power system to provide quality power to all appliances. Electrical power of good quality is essential for proper operation of electronic equipments such as computers and PLCs. Malfunction of such equipment may lead to loss of production or disruption of critical services resulting in huge financial and other losses. It is therefore necessary that critical loads be supplied with electricity of acceptable quality. Recognition of the presence of any disturbance and classifying any existing disturbance into a particular type is the first step in combating the problem. In this work two classes of AI methods for Power quality data mining are studied: Artificial Neural Networks (ANNs) and Support Vector Machines (SVMs). We show that SVMs are superior to ANNs in two critical respects: SVMs train and run an order of magnitude faster; and SVMs give higher classification accuracy.

Classification is one of the primary themes in computational biology. The accuracy of classification strongly depends on quality of a dataset, and we need some method to evaluate this quality. In this paper, we propose a new graphical analysis method using 'Membership-Deviation Graph (MDG)' for analyzing quality of a dataset. MDG represents degree of membership and deviations for instances of a class in the dataset. Up to now, various models with diverse approaches have been applied to investigate organizations- strategic position in different industries. Regarding the essential importance and strategic role of quality in higher education institutes, in this study, a quality-oriented approach has been suggested to positioning them in their strategic environment. Then the European Foundation of Quality Management (EFQM) model has been adopted to position the top Iranian business schools in their strategic environment. Abstract:
The intermittent nature of solar energy and the energy requirements of buildings necessitate the storage of thermal energy. In this paper a hybrid system of storing solar energy has been analyzed. Adding a LHS medium to a commercial solar water heater, the required energy for heating a small room was obtained in addition to preparing hot water. In other words, the suggested hybrid storage system consists of two tanks: a water tank as a SHS medium; and a paraffin tank as a LHS medium. A computing program was used to find the optimized time schedule of charging the storage tanks during each day, according to the solar radiation conditions. The results show that the use of such system can improve the capability of energy gathering comparing to the individual water storage tank during the cold months of the year. Of course, because of the solar radiation angles and shorten daylight in December & January, the performance will be the same as the simple solar water heaters (in the northern hemisphere). But the extra energy stored in November, February, March & April, can be useful for heating a small room for 3 hours during the cold days.Keywords: Hybrid, Optimization, Solar thermal energy, Storage.

Recently, in some places, optical-fibre access networks have been used with GPON technology belonging to organizations (in most cases public bodies) that act as neutral operators. These operators simultaneously provide network services to various telecommunications operators that offer integrated voice, data and television services. This situation creates new problems related to quality of service, since the interests of the users are intermingled with the interests of the operators. Abstract:
Project managers are the ultimate responsible for the overall characteristics of a project, i.e. they should deliver the project on time with minimum cost and with maximum quality. It is vital for any manager to decide a trade-off between these conflicting objectives and they will be benefited of any scientific decision support tool. Our work will try to determine optimal solutions (rather than a single optimal solution) from which the project manager will select his desirable choice to run the project. In this paper, the problem in project scheduling notated as (1,T|cpm,disc,mu|curve:quality,time,cost) will be studied. The problem is multi-objective and the purpose is finding the Pareto optimal front of time, cost and quality of a project (curve:quality,time,cost), whose activities belong to a start to finish activity relationship network (cpm) and they can be done in different possible modes (mu) which are non-continuous or discrete (disc), and each mode has a different cost, time and quality . The project is constrained to a non-renewable resource i.e. money (1,T). Because the problem is NP-Hard, to solve the problem, a meta-heuristic is developed based on a version of genetic algorithm specially adapted to solve multi-objective problems namely FastPGA. This study was designed to formulate, pharmaceutically evaluate a topical skin-care cream (w/o emulsion) of Aloe Vera versus its vehicle (Base) as control and determine their effects on Stratum Corneum (SC) water content and Transepidermal water loss (TEWL). Base containing no extract and a Formulation containing 3% concentrated extract of Aloe Vera was developed by entrapping in the inner aqueous phase of w/o emulsion (cream). Lemon oil was incorporated to improve the odor. Both the Base and Formulation were stored at 8°C ±0.1°C (in refrigerator), 25°C±0.1°C, 40°C±0.1°C and 40°C± 0.1°C with 75% RH (in incubator) for a period of 4 weeks to predict their stability. The evaluation parameters consisted of color, smell, type of emulsion, phase separation, electrical conductivity, centrifugation, liquefaction and pH. Both the Base and Formulation were applied to the cheeks of 21 healthy human volunteers for a period of 8 weeks Stratum corneum (SC) water content and Transepidermal water loss (TEWL) were monitored every week to measure any effect produced by these topical creams. The expected organoleptic stability of creams was achieved from 4 weeks in-vitro study period. Odor was disappeared with the passage of time due to volatilization of lemon oil. Both the Base and Formulation produced significant (p≤0.05) changes in TEWL with respect to time. SC water content was significantly (p≤0.05) increased by the Formulation while the Base has insignificant (p 0.05) effects on SC water content. The newly formulated cream of Aloe Vera, applied is suitable for improvement and quantitative monitoring of skin hydration level (SC water content/ moisturizing effects) and reducing TEWL in people with dry skin.Keywords: Aloe Vera; Skin; Stratum corneum (SC) water content and Transepidermal water loss (TEWL).

Abstract:
The organic farmers use wider range of crop varieties than the conventional farming. Bread wheat is the most favorite and the most common food crop. The organic bread wheat is usually of worse technological quality. Therefore, it is supposed to be an attractive alternative to the hulled wheat species (einkorn, emmer wheat and spelt). Twenty-five hulled bread wheat varieties and control bread wheat ones were grown on the certified organic parcel in České Budějovice (the Czech Republic) between 2009 and 2012. Their baking quality was measured and evaluated with standard methods, and in accordance with ICC. The results have shown that the grain of hulled wheat varieties contain a lot of proteins in grains (up to 18 percent); even the organic hulled bread wheat varieties are characterized by such good baking quality. Einkorn and emmer wheat are of worse technological quality of proteins (low values of gluten index and Zeleny test), which is a disadvantage of these two wheat species. On the other hand, spelt wheat is of better technological quality and is similar to the control bread wheat varieties. Mixtures consisting of bread wheat, among others, are considered good alternatives; they may contribute to wider range of use of the hulled wheat species. It is one of the possibilities which may increase the proportion of proteins in bread wheat grains; the nutrition-rich hulled wheat grains may be also used in such way at the same time.
