63 The Effects of Applying Wash and Green-A Syrups as Substitution of Sugar on Dough and Cake Properties

Abstract:
Usage of different components has been considered to improve the quality and nutritional properties of cakes in recent years. The effects of applying some sweeteners, instead of sugar, have been evaluated in cakes and many bread formulas up to now; but there has not been any research about the usage of by-products of sugar factories such as Wash and Green-A Syrups in cake formulas. In this research, the effects of substituting 25%, 50%, 75% and 100% of sugar with Wash and Green-A Syrups on some dough and cake properties, such as pH, viscosity, density, volume, weight loss, moisture, water activity, texture, staling, color and sensory evaluations, are studied. The results of these experiments showed that the pH values were not significantly different among any of the all cake batters and also most of the cake samples. Although differences among viscosity and specific gravity of all treatments were both significant and insignificant, these two parameters resulted in higher volume in all samples than the blank one. The differences in weight loss, moisture content and water activity of samples were insignificant. Evaluating of texture showed that the softness of most of samples is increased and the staling is decreased. Crumb color and sensory evaluations of samples were also affected by the replacement of sucrose with Wash and Green-A Syrups. According to the results, we can increase the shelf life and improve the quality and nutritional values of cake by using these kinds of syrups in the formulation.Keywords: Cake, green-A syrup, quality tests, sensory evaluation, wash syrup.

Abstract:
For controlling urban transportations, traffic lights show similar behavior for different kinds of vehicles at intersections. Emergency vehicles need special behavior at intersections, so traffic lights should behave in different manner when emergency vehicles approach them. At the present time, intelligent traffic lights control urban transportations intelligently. In this paper the ethical aspect of this topic is considered. A model is proposed for adding special component to emergency vehicles and traffic lights for controlling traffic in ethical manner. Abstract:
This paper addresses one of the most important issues have been considered in hybrid MTS/MTO production environments. To cope with the problem, a mathematical programming model is applied from a tactical point of view. The model is converted to a fuzzy goal programming model, because a degree of uncertainty is involved in hybrid MTS/MTO context. Abstract:
The purpose of the present study was to evaluate carboxymethyl cellulose (CMC) coated polypropylene (PP) films containing Zataria multiflora (ZEO) essential oils (4%) as an antimicrobial packaging for chicken breast stored at 4 °C. To increase PP film hydrophilicity, it was treated by atmospheric cold plasma prior to coating by CMC. Then, different films including PP, PP/CMC, PP/CMC containing 4% of ZEO were used for the chicken meat packaging in vapor phase. Total viable count and pseudomonads population and oxidative (TBA) changes of the chicken breast were analyzed during shelf life. Results showed that the shelf life of chicken meat kept in films containing ZEO improved from three to nine days compared to the control sample without any direct contact with the film. Study of oxygen barrier properties of bilayer film without essential oils (0.096 cm3 μm/m2 d kPa) in comparison with PP film (416 cm3 μm/m2 d kPa) shows that coating of PP with CMC significantly reduces oxygen permeation of the obtained packaging (P<0.05), which reduced aerobic bacteria growth. Chemical composition of ZEO was also evaluated by gas chromatography–mass spectrometry (GC–MS), and this shows that thymol was the main antimicrobial and antioxidant component of the essential oil. The results revealed that PP/CMC containing ZEO has good potential for application as active food packaging in indirect contact which would also improve sensory properties of product.

There is no standard rule for using design patterns. There are some situations that a pattern is applied for a specific problem and this pattern uses another pattern. Abstract:
The objective of the present study is to numerically investigate the effect of CO2 replacement of N2 in air stream on the flame characteristics of the CH4 turbulent diffusion flame. The Open source Field Operation and Manipulation (OpenFOAM) has been used as the computational tool. In this regard, laminar flamelet and modified k-ε models have been utilized as combustion and turbulence models, respectively. Results reveal that the presence of CO2 in air stream changes the flame shape and maximum flame temperature. Many XML storage models have been proposed for storing XML DTD-independent documents in relational database systems. Benchmarking is the best way to highlight pros and cons of different approaches. In this study, we use a common benchmarking scheme, known as XMark to compare the most cited and newly proposed DTD-independent methods in terms of logical reads, physical I/O, CPU time and duration. Abstract:
This article is presented an experimental and modeling study of a four-bed pressure swing adsorption process using zeolite13X to provide oxygen-enriched air. The binary mixture N2/O2 (79/21 vol %) was used as a feed stream. The effects of purge/feed ratio (P/F), adsorption pressure, cyclic time and product flow rate on product purity and recovery under nonisothermal condition were studied. The adsorption dynamics of process were determined using a mathematical model incorporated mass and energy balances. A Mathlab code using finite difference method was developed to solve the set of coupled differential-algebraic equations, and the simulation results are agreed well with experimental results.Keywords: Pressure swing adsorption (PSA), Oxygen, Zeolite 13X.

Abstract:
This paper presents a hybrid approach for solving nqueen problem by combination of PSO and SA. PSO is a population based heuristic method that sometimes traps in local maximum. To solve this problem we can use SA. Although SA suffer from many iterations and long time convergence for solving some problems, By good adjusting initial parameters such as temperature and the length of temperature stages SA guarantees convergence. In this article we use discrete PSO (due to nature of n-queen problem) to achieve a good local maximum. Then we use SA to escape from local maximum. The experimental results show that our hybrid method in comparison of SA method converges to result faster, especially for high dimensions n-queen problems.

Abstract:
People usually have a telephone voice, which means they adjust their speech to fit particular situations and to blend in with other interlocutors. The question is: Do we speak differently to different people? This possibility has been suggested by social psychologists within Accommodation Theory [1]. Converging toward the speech of another person can be regarded as a polite speech strategy while choosing a language not used by the other interlocutor can be considered as the clearest example of speech divergence [2]. The present study sets out to investigate such processes in the course of everyday telephone conversations. Using Joos-s [3] model of formality in spoken English, the researchers try to explore convergence to or divergence from the addressee. The results propound the actuality that lexical choice, and subsequently, patterns of style vary intriguingly in concordance with the person being addressed.Keywords: Convergence, divergence, lexical formality, speechaccommodation.

The database reverse engineering problems and solving processes are getting mature, even though, the academic community is facing the complex problem of knowledge transfer, both in university and industrial contexts. This paper presents a new CASE tool developed at the University of Jordan which addresses an efficient support of this transfer, namely UJ-CASE-TOOL. It is a small and self-contained application exhibiting representative problems and appropriate solutions that can be understood in a limited time. It also provides opportunities to better implement six sigma projects. The purpose of this paper is the survey of six sigma process and its impact on the organizational productivity. Abstract:
In the present work, the performance of the particle swarm optimization and the genetic algorithm compared as a typical geometry design problem. The design maximizes the heat transfer rate from a given fin volume. The analysis presumes that a linear temperature distribution along the fin. The fin profile generated using the B-spline curves and controlled by the change of control point coordinates. An inverse method applied to find the appropriate fin geometry yield the linear temperature distribution along the fin corresponds to optimum design. The numbers of the populations, the count of iterations and time to convergence measure efficiency. Abstract:
In this paper, based on the coupled-mode and carrier rate equations, derivation of a dynamic model and numerically analysis of a MQW chirped DFB-SOA all-optical flip-flop is done precisely. We have analyzed the effects of strains of QW and MQW and cross phase modulation (XPM) on the dynamic response, and rise and fall times of the DFB-SOA all optical flip flop. We have shown that strained MQW active region in under an optimized condition into a DFB-SOA with chirped grating can improve the switching ON speed limitation in such a of the device, significantly while the fall time is increased. The values of the rise times for such an all optical flip-flop, are obtained in an optimized condition, areas tr=255ps.

Abstract:
This case study investigates the effects of reactive focus on form through negotiation on the linguistic development of an adult EFL learner in an exclusive private EFL classroom. The findings revealed that in this classroom negotiated feedback occurred significantly more often than non-negotiated feedback. However, it was also found that in the long run the learner was significantly more successful in correcting his own errors when he had received nonnegotiated feedback than negotiated feedback. This study, therefore, argues that although negotiated feedback seems to be effective for some learners in the short run, it is non-negotiated feedback which seems to be more effective in the long run. This long lasting effect might be attributed to the impact of schooling system which is itself indicative of the dominant culture, or to the absence of other interlocutors in the course of interaction.Keywords: error, feedback, focus on form, interaction, schooling.

Abstract:
Detection and recognition of the Human Body Composition and extraction their measures (width and length of human body) in images are a major issue in detecting objects and the important field in Image, Signal and Vision Computing in recent years. Finding people and extraction their features in Images are particularly important problem of object recognition, because people can have high variability in the appearance. This variability may be due to the configuration of a person (e.g., standing vs. sitting vs. jogging), the pose (e.g. frontal vs. lateral view), clothing, and variations in illumination. In this study, first, Human Body is being recognized in image then the measures of Human Body extract from the image.

Abstract:
Validity is an overriding consideration in language testing. If a test score is intended for a particular purpose, this must be supported through empirical evidence. This article addresses the validity of a multiple-choice achievement test (MCT). The test is administered at the end of each semester to decide about students' mastery of a course in general English. To provide empirical evidence pertaining to the validity of this test, two criterion measures were used. In so doing, a Cloze test and a C-test which are reported to gauge general English proficiency were utilized. The results of analyses show that there is a statistically significant correlation among participants' scores on the MCT, Cloze, and Ctest. Drawing on the findings of the study, it can be cautiously deduced that these tests measure the same underlying trait. However, allowing for the limitations of using criterion measures to validate tests, we cannot make any absolute claim as to the validity of this MCT test.

Detection, feature extraction and pose estimation of people in images and video is made challenging by the variability of human appearance, the complexity of natural scenes and the high dimensionality of articulated body models and also the important field in Image, Signal and Vision Computing in recent years. In this paper, four types of people in 2D dimension image will be tested and proposed. The system will extract the size and the advantage of them (such as: tall fat, short fat, tall thin and short thin) from image. Fat and thin, according to their result from the human body that has been extract from image, will be obtained. Abstract:
Previously, some materials like solid metals and their alloys have been used as implants in human’s body. In order to amend fixation of these artificial hard human tissues, some porous structures have been introduced. In this way, tissues in vicinity of the porous structure can be attached more easily to the inserted implant. In particular, the porous bone scaffolds are useful since they can deliver important biomolecules like growth factors and proteins. This study focuses on the properties of the degradable porous hard tissues using a three-dimensional numerical Finite Element Method (FEM). The most important studied properties of these structures are diffusivity flux and concentration of different species like glucose, oxygen, and lactate. Abstract:
The present paper presents a finite element model and analysis for the interaction between a piezoresistive tactile sensor and biological tissues. The tactile sensor is proposed for use in minimally invasive surgery to deliver tactile information of biological tissues to surgeons. The proposed sensor measures the relative hardness of soft contact objects as well as the contact force. Silicone rubbers were used as the phantom of biological tissues. Finite element analysis of the silicone rubbers and the mechanical structure of the sensor were performed using COMSOL Multiphysics (v3.4) environment. In recent years, most of the regions in the world are exposed to degradation and erosion caused by increasing population and over use of land resources. The understanding of the most important factors on soil erosion and sediment yield are the main keys for decision making and planning. In this study, the sediment yield and soil erosion were estimated and the priority of different soil erosion factors used in the MPSIAC method of soil erosion estimation is evaluated in AliAbad watershed in southwest of Isfahan Province, Iran. Different information layers of the parameters were created using a GIS technique. Then, a multivariate procedure was applied to estimate sediment yield and to find the most important factors of soil erosion in the model. Abstract:
This paper presents the research and application of model predictive scheduled charging of electric vehicles (EV) subject to limited available power resource. To focus on algorithm and operational characteristics, the EV interface to the source is modelled as a battery state equation during the charging operation. The researched methods allow for the priority scheduling of EV charging in a multi-vehicle regime and when subject to limited source power availability. Priority attribution for each connected EV is described. The validity of the developed methodology is shown through the simulation of different scenarios of charging operation of multiple connected EVs including non-scheduled and scheduled operation with various numbers of vehicles. Performance of the developed algorithms is also reported with the recommendation of the choice of suitable parameters.

The world demand for potable water is increasing every day with growing population. Desalination using solar energy is suitable for potable water production from brackish and seawater. In this paper, we present a theoretical study of solar distillation in a single basin under the open environmental conditions of Chabahar-Iran. The still has a base area of 2000mm×500mm with a glass cover inclined at 25° in order to obtain extra solar energy. We model the still and conduct its energy balance equations under minor assumptions. We computed the temperatures of glass cover, seawater interface, moist air and bottom using numerical method. The investigation addressed the following: The still productivity, distilled water salinity and still performance in terms of the still efficiency. Calculated still productivity in July was higher than December. In this research, effect of combustion reaction mechanism on direct initiation of detonation has been studied numerically. For this purpose, reaction mechanism has been simulated by using a three-step chemical kinetics model. The reaction scheme consists sequentially of a chain-initiation and chainbranching step, followed by a temperature -independent chaintermination. In a previous research, the effect of chain-branching on the direct initiation of detonation is studied. In this research effect of chain-initiation on direct initiation of detonation is investigated. For the investigation, first a characteristic time (τ) for each step of mechanism, which includes effect of different kinetics parameters, is defined. Then the effect of characteristic time of chain-initiation (τI) on critical initiation energy is studied. It is seen that increasing τI, causes critical initiation energy to be increased. Drawing detonation's shock pressure diagrams for different cases, shows that in small value of τI , kinetics has more important effect on the behavior of the wave.Keywords: Detonation initiation, Initiation energy, Reaction rate, Characteristic time.

Abstract:
Pervious concrete combines considerable permeability with adequate strength, which makes it very beneficial in pavement construction and also in ground improvement projects. In this paper, a single pervious concrete pile subjected to vertical and lateral loading is analysed using a verified three dimensional finite element code. A parametric study was carried out in order to investigate load bearing capacity of a single unreinforced pervious concrete pile in saturated soft soil and also gain insight into the failure mechanism of this rather new soil improvement technique. The results show that concrete damaged plasticity constitutive model can perfectly simulate the highly brittle nature of the pervious concrete material and considering the computed vertical and horizontal load bearing capacities, some suggestions have been made for ground improvement projects.

Abstract:
In the present study, the rate of NOx emission in a combustion chamber working in conventional combustion and High Temperature Air Combustion (HiTAC) system are examined using CFD modeling. The effect of peak temperature, combustion air temperature and oxygen concentration on NOx emission rate was undertaken. Results show that in a fixed oxygen concentration, increasing the preheated air temperature will increase the peak temperature and NOx emission rate. In addition, it was observed that the reduction of the oxygen concentration in the fixed preheated air temperature decreases the peak temperature and NOx emission rate. On the other hand, the results show that increase of preheated air temperature at various oxygen concentrations increases the NOx emission rate. However, the rate of increase in HiTAC conditions is quite lower than the conventional combustion. The modeling results show that the NOx emission rate in HiTAC combustion is 133% less than that of the conventional combustion.Keywords: CFD Modeling, HiTAC, NOx, Combustion.

Abstract:
This paper introduces a method to optimal design of a hybrid Wind/Photovoltaic/Fuel cell generation system for a typical domestic load that is not located near the electricity grid. In this configuration the combination of a battery, an electrolyser, and a hydrogen storage tank are used as the energy storage system. The aim of this design is minimization of overall cost of generation scheme over 20 years of operation. The Matlab/Simulink is applied for choosing the appropriate structure and the optimization of system sizing. A teaching learning based optimization is used to optimize the cost function. An overall power management strategy is designed for the proposed system to manage power flows among the different energy sources and the storage unit in the system. The results have been analyzed in terms of technical and economic. The simulation results indicate that the proposed hybrid system would be a feasible solution for stand-alone applications at remote locations.Keywords: Hybrid energy system, optimum sizing, power management, TLBO.

Development of cities and villages, agricultural farms and industrial regions in abutment and/or in the course of streams and rivers or in prone flood lands has been caused more notations in hydrology problems and city planning topics. In order to protection of cities against of flood damages, embankment construction is a desired and scientific method. The cities that located in arid zones may damage by floods periodically. Zavvareh city in Ardestan township(Isfahan province) with 7704 people located in Ardestan plain that has been damaged by floods that have flowed from dominant mountainous watersheds in past years with regard to return period. In this study, according to flowed floods toward Zavvareh city, was attempt to plan suitable hydraulic structures such as canals, bridges and collectors in order to collection, conduction and depletion of city surface runoff.Keywords: Flood, flood way, executive consideration, embankment, surface runoff network, Zavvareh.

Abstract:
This paper deals with the project selection problem. Project selection problem is one of the problems arose firstly in the field of operations research following some production concepts from primary product mix problem. Afterward, introduction of managerial considerations into the project selection problem have emerged qualitative factors and criteria to be regarded as well as quantitative ones. To overcome both kinds of criteria, an analytic network process is developed in this paper enhanced with fuzzy sets theory to tackle the vagueness of experts- comments to evaluate the alternatives. Additionally, a modified version of Least-Square method through a non-linear programming model is augmented to the developed group decision making structure in order to elicit the final weights from comparison matrices. Finally, a case study is considered by which developed structure in this paper is validated. Moreover, a sensitivity analysis is performed to validate the response of the model with respect to the condition alteration.
