8 Bioactive Compounds Content of Citrus Peel as Affected by Drying Processes

Abstract:

The present investigation studied the content of bioactive compounds as ascorbic acid, β-carotene, and flavonoids, and the effect of drying methods (microwave, solar, and air oven drying) on its level in citrus peel. These levels were decreased significantly (p <0.05) due to the dried methods. The percentage of ascorbic acid content loss of orange C. Valencia were 46.64, 52.95 and 68.83% with microwave, solar and air oven methods, respectively comparing to fresh samples. Also, the percentages of β- carotene loss of orange C. Valencia were 38.89, 52.42 and 87.14% with microwave, solar and air oven methods, respectively. Total flavonoid content recorded 453.33, 396.67 and 327.50 mg QE/100g dw, with dried by microwave, solar and oven methods, respectively compared with control in orange, C. valencia. These results revealed that microwave drying procedure was the most effective method which maintained citrus bioactive compounds content (ascorbic acid, β-carotene and flavonoid) followed by solar. On the other hand, air oven drying came in the last order due to direct heat treatment.

7 Determination of Vitamin C (Ascorbic Acid) in Orange Juices Product

Abstract:

This research describes a voltammetric approach to determine amounts of vitamin C (Ascorbic acid) in orange juice sample, using three screen printed electrode. The anodic currents of vitamin C were proportional to vitamin C concentration in the range of 0 – 10.0 mM with the limit of detection of 1.36 mM. The method was successfully employed with 2 µL of the working solution dropped on the electrode surface. The proposed method was applied for the analysis of vitamin C in packed orange juice without sample purification or complexion of sample preparation step.

6 Green-Reduction of Covalently Functionalized Graphene Oxide with Varying Stoichiometry

Abstract:

Graphene-based materials were prepared by chemical reduction of covalently functionalized graphene oxide with environmentally friendly agents. Two varying stoichiometry of graphene oxide (GO) induced by using different chemical preparation conditions, further covalent functionalization of the GO materials with 1-ethyl-3-(3-dimethylaminopropyl) carbodiimide hydrochloride / N-hydroxysuccinimide and ascorbic acid and sodium bisulfite as reducing agents were exploited in order to obtain controllable properties of the final solution-based graphene materials. The obtained materials were characterized by thermo-gravimetric analysis, Fourier transform infrared and Raman spectroscopy and X-ray diffraction. The results showed successful functionalization of the GO materials, while a comparison of the deoxygenation efficiency of the two-type functionalized graphene oxide suspensions by the different reducing agents has been made, revealing the strong dependence of their properties on the GO structure and reducing agents.

5 Extend of Self-Life of Potato Round Slices with Edible Coating, Green Tea and Ascorbic Acid

Abstract:

The effects of coatings based on sodium alginate (S.A) and carboxyl methyl cellulose (CMC) on the color and moisture characteristics of potato round slices were investigated. It is the first time that this combination of polysaccharides is used as edible coating which alone had the best performance as inhibitor of potato color discoloration during the storage of 15 days at 4oC. When ascorbic acid (AA) and green tea (GT) were added in the above edible coating its effects on potato round slices changed. The mixtures of sodium alginate and carboxyl methyl cellulose with ascorbic acid or with green tea behave as a potential moisture barrier, resulting to the extent of potato samples self–life. These data suggests that both GT and AA are potential inhibitors of dehydration in potatoes and not only natural antioxidants.

4 Microencapsulation of Ascorbic Acid by Spray Drying: Influence of Process Conditions

Abstract:

Ascorbic acid (AA), commonly known as vitamin C, is essential for normal functioning of the body and maintenance of metabolic integrity. Among its various roles are as an antioxidant, a cofactor in collagen formation and other reactions, as well as reducing physical stress and maintenance of the immune system. Recent collaborative research between the Australian Defence Science and Technology Organisation (DSTO) in Scottsdale, Tasmania and RMIT University has sought to overcome the problems arising from the inherent instability of ascorbic acid during processing and storage of foods. The recent work has demonstrated the potential of microencapsulation by spray drying as a means to enhance retention. The purpose of this current study has been focused upon the influence of spray drying conditions on the properties of encapsulated ascorbic acid. The process was carried out according to a central composite design. Independent variables were: inlet temperature (80-120° C) and feed flow rate (7-14 mL/minute). Process yield, ascorbic acid loss, moisture content, water activity and particle size distribution were analysed as responses. The results have demonstrated the potential of microencapsulation by spray drying as a means to enhance retention. Vitamin retention, moisture content, water activity and process yield were influenced positively by inlet air temperature and negatively by feed flow rate.

3 Investigation on Yield and Fruit Quality of Some Cultivated Strawberry in Iran

Abstract:

fifteen cultivars of Strawberries (Queen Eliza, Sequia, Paros, Mcdonance, Selva, Chandler, Mrak, Ten beauty, Aliso, Pajero, Kordestan, Camarosa, Blackmore, Gaviota and Fresno) were investigated in 2011, under hydroponic system condition. Yield and fruit Firmness was determinate. Chemical analyses of soluble solids content (SSC), titratable acidity (TA), ascorbic acid (AA) and pH were done. 4 cultivars (Aliso, Selva, Paros and Gaviota) yielded more than 250 g/plant, while cultivar Black more, Fresno and Kordestan produced less than 100g/plant. The amounts of fruit firmness indicated that 'Camarosa' fruit was firmer than others cultivars. Cultivar 'Fresno' had the highest pH (3.27). Ttitratable acidity varied from 1.03g/l00g for cultivar 'Sequia' and 'Gaviota' to 1.48g/l00g for cultivar 'Chandler'. Fresno, Kordestan, Aliso and Chandler showed the highest soluble solid concentration. Ascorbic acid averaged for most cultivars between 30.26 and 79.73 mg/100gf.w. Present results showed that different cultivars of strawberry contain highly variable in fruit quality.

2 Development and Characterization of Normoxic Polyhydroxyethylacrylate (PHEA) Gel Dosimeter using Raman Spectroscopy

Abstract:

Raman spectroscopy are used to characterize the chemical changes in normoxic polyhydroxyethylacrylate gel dosimeter (PHEA) induced by radiation. Irradiations in the low dose region are performed and the polymerizations of PHEA gels are monitored by the observing the changes of Raman shift intensity of the carbon covalent bond of PHEA originated from both monomer and the cross-linker. The variation in peak intensities with absorbed dose was observed. As the dose increase, the peak intensities of covalent bond of carbon in the polymer gels decrease. This point out that the amount of absorbed dose affect the polymerization of polymer gels. As the absorbed dose increase, the polymerizations also increase. Results verify that PHEA gel dosimeters are sensitive even in lower dose region.

1 Proteomic Analysis of Tumor Tissue after Treatment with Ascorbic Acid

Abstract:

Tumor cells have an invasive and metastatic phenotype that is the main cause of death for cancer patients. Tumor establishment and penetration consists of a series of complex processes involving multiple changes in gene expression. In this study, intraperitoneal administration of a high concentration of ascorbic acid inhibited tumor establishment and decreased tumor mass in BALB/C mice implanted with S-180 sarcoma cancer cells. To identify proteins involved in the ascorbic acid-mediated inhibition of tumor progression, changes in the tumor proteome associated with ascorbic acid treatment of BALB/C mice implanted with S-180 were investigated using two-dimensional gel electrophoresis and mass spectrometry. Twenty protein spots were identified whose expression was different between control and ascorbic acid treatment groups.
